1. Trim as much fat as possible off the meat. 2. Slice meat thinly against the grain. 3. Use a mallet to tenderize the meat. 4. Blend habanero into a small amount of the sauce. Use 3 full peppers and only the flesh of the other 3, discarding the seeds. 5. Combine meat with the rest of the sauce and allow the marinate in the fridge for 6 hours. 6. Mix the meat up and return to the fridge to marinate for another 6 hours. 7. Dehydrate the meat in a food dehydrator. 8. Dehydration will require about 10 hours. 9. Store in plastic zip-top bag with a food desiccant packet.
